You will meet maitre chocolatier, expert bakers, truffle hunters, .. most of them are famous in Italy and beyond but the most impressive feature is that usually these are family-run business. So visiting these places it will be like discovering the techniques and the secrets of a handcrafted product and of the people that spend their life to improve it.
This itinerary is possible all year round, of course according to the season of travel we could suggest most specific activities, for example if you are travelling in spring instead of aromatic herbs you could learn to discover the wild herbs (picking them in the countryside); same thing for the truffle, you can find the finest one in winter but is possible to find other kinds of truffles during the other seasons.
In each city that you are going to visit our guide will show you the artisans’ production, for example in Florence you will have the chance to meet the artisans and see how they create leather accessories or silver and gold jewels.

Morning – Guided tour of Pistoia. This charming and still unknown medieval city will surprise you with its beautiful Duomo square (which is one of the prettiest squares of Italy) and its well preserved historical centre. Vist of the open air fruit & vegetable. Lunch at local restaurant with local food and wine
Afternoon – Discover one of the secrets of Tuscan cuisine: the aromatic herbs such as rosemary, basil, sage, tarragon and parsley. Our expert will explain you the properties and how they are used to add zest to already exquisite dishes, to flavour meat. Dinner at leisure
Morning – Transfer to Siena. Guided tour of Siena. Discover this city through its most famous event: the Palio. This heart-stopping horse race run around the Piazza del Campo lasts just 90 seconds, but it is the key to understand this city divided in rivals neighbourhoods (intermarriage is often forbidden) with intriguing secrets and rituals. Lunch at Millevini restaurant hosted in the Enoteca Italiana in Siena where over 1,500 bottles of wine are on display in the cellars
Afternoon – Enjoy a wine tasting class: a sommelier of Enoteca Italian will introduce you to the Italian and Tuscan wines: visiting the wine showroom and tasting three different wines. Time at leisure in Siena Transfer to Pistoia dinner at leisure.
Morning – Transfer to Carmignano area. Cooking class in an ancient villa. The chef will show you the fundamentals of Tuscan cuisine and will assist participants in the preparation of special recipes part of our most ancient culinary tradition. Lunch with the dishes prepared during the course and tasting of the estate’s wines.
Afternoon – Guided tour of the olive press, the grand underground wine cellars and the “vinsanteria” (sweet wine cellar). Visitors will have the opportunity to experience for themselves the fascinating and complex journey of the grapes as they are transformed into wine or into special vinsanto and to taste the estate’s products.
Morning – Transfer to Florence. Discover Florence through its traditional food and wine. Your tour will begin with an Italian ritual, stop in a cafe to sip a cappuccino and eat a delicious local pastry. Next enjoy the visit of the Florence market. Enjoy the colours, the smells and the delicatessen displayed on this enchanting market. On request, the vendors are sure to give you a sampling of some of their special products. Discover also the secrets of the aristocratic families who lived in Florence in the past century (conspiracies and coalitions) and of the families who made Florence one of the most important city of art, fashion and wine.
Afternoon – Discover the Florentine artisans’ production that has made Florence the capital of handicraft. The Florentine tradition of producing handcrafted goods is centuries old and remains one of the Florentine leatherworkers, silversmiths, shoe manufacturers and hat-makers have long produced handmade goods for kings and queens, princes and nobility, working mostly in the area known as Oltrarno, a neighbourhood that has been home to artisans for over five hundred years. Transfer back and dinner at leisure.
Morning – The area of Pistoia is called “Chocolate Valley” and it is famous for the high-quality artisanal production of chocolate. Some of the most important Italian chocolatier has their workshops in this area. Meeting with one of this famous maitre chocolatier, visit of the workshop and brief introduction with chocolate tasting.
Light lunch. The food you will taste is a selection of some of the best Tuscan and Italian producers, and some special baking product.
Afternoon – A highly skilled baker will explain you the secrets of cooking, kneading, rising and baking some products of the Tuscany gastronomic tradition (bread, focaccia, pappa with tomato, cakes, desserts and dry pastry).
Transfer back to Pistoia and dinner at leisure.
Morning – Transfer to Chianti. Visit of an important diary, which produces top quality cheeses starting from their own production of sheep’s milk. This fattoria is not only known for its variety of cheeses but also for its wines. So you will visit the cellars and enjoy a lunch with tasting of wines, olive oil, salads, local cured meats, schiacciata flatbread, dessert and cheeses, with further explanation of the products and wine and cheese pairing.
Afternoon – Visit of a olive oil mill in Chianti Area. Everything you have to know about extra virgin olive oil! This special experience begins with a visit of the olive groves and brief explanation about the variety of olive trees. Than you will have the chance to visit the mill and understand the pressing process: from the olive to the olive oil. Enjoy a professional glass tasting followed by tasting of different oils to understand how important is choosing the right oil to enhance the aroma and flavour of our recipes.
Transfer back to Pistoia and dinner at leisure
Morning – Transfer to Pisa area. Enjoy a fantastic experience: Truffle hunting! Accompanied by expert truffle hunters with their dogs. Together with the hunter, his dog and the guide you walk into the surrounding woods, in Pisan hills, for a truffle hunting session. The destination in the woods varies according to the season because the several kinds of truffle available throughout the year grow in different areas. After the walk in the woods, you get back to the hunter’s place, which is e of the most famous company specialized in the finest craftsmanship of truffle products. Enjoy a truffle-based full lunch!
Afternoon – Departure to Pisa. Guided tour of Piazza dei Miracoli.
On display here are the monuments that create the centre of the religious life of the town. Thanks to their beauty and uniqueness: the Cathedral, the Baptistry, the Camposanto monumentale and the Leaning Tower are included in the UNESCO list. Transfer back to the hotel and dinner at local restaurant
